• A book by Jane Kinderlehrer: Cooking Kosher The Natural Way. She says to "stay as close to Nature as possible. Avoid the four whites: white sugar, white flour, refined white salt, and devitalized white rice." You should have a supply of: wheat germ (raw or toasted), bran, nutritional or brewer's yeast, honey, whole wheat flour, soy flour, carob powder, oils (pressed), seeds (sesame, sunflower, pumpkin, poppy), seeds for sprouting, sea salt or mineral salt, lecithin granules and soy grits, beans, grains, unsweetened coconut, dried fruit, raw nuts--sunflower/sesame/pumpkin seeds, molasses (unsulphured), arrowroot powder, baking powder (aluminum-free). Discard opened containers of: refined sugar, bleached white flour, hydrogenated fats, minute rice, packaged goods with BHA or BHT, canned fruits in sugar syrup, non-dairy creamers. Helpful hints: Use 1/2 c honey instead of 1 c sugar. Reduce liquid in recipe by 3/4 c for each c of honey and bake at 25 degrees lower temp. Tamari Soy Sauce is superior. Oil is 100% fat, butter is 80% (& 20% water); for recipe needing 1 c butter, use 1 c minus 3 T of oil plus 3 T of liquid. Food supplements (daily): Vit. A, C & E plus an all-purpose natural formula, B complex, alfalfa tablet, calcium, magnesium & zinc. Our family takes glutamic hydrochloride also.
A Chocolate/cocoa alternative: Carob. It's high in potassium, low in sodium, rich in minerals. If recipe calls for cocoa, use equal amount of carob powder; if for chocolate use 3 T carob powder plus 1 T water instead of 1 square of chocolate. Use less sweetener when you substitute it for cocoa in candies cakes cookies and pies. (Kroger in Calhoun has carob in the special foods section.)

Recipe to try
4 well-beaten eggs
1.25 Cups oil (add slowly, beat until smooth)
1.75 cups sugar mixed with 6 T carob powder
2.5 cups flour mixed with .75—1 tsp. salt and 2 tsp. baking soda
Add date mixture (beat slowly)
Pour into will-greased and wax paper-lined round or square pans.
Bake at 325 for 50 min. to 1 hr.
